Spicy Black Bean and Rice Soup

  • 1 Diced Onion
  • 1 Diced Green Bell Pepper
  • 1 Diced Red Bell Pepper
  • 4 Ears Corn, Cut off the Cob
  • 3 Cups Cooked Black Turtle Beans
  • 2 Cups Cooked Brown Rice
  • 1 Can Organic Tomato Sauce
  • 1 Can Organic Diced Tomatoes
  • 2 Cups Water
  • 2 Tsp. Mexican Seasoning (approx.)

 

Methods/steps

Steam sauté onions and bell peppers. Stir in the remaining ingredients. Simmer until ready to eat.

Additional Tips

This is wonderful served with baked corn chips and rice cheese!
